I have LOVED tomatoes since I can remember. Like, eat them like an apple, love. Not to worry, I haven't done that in years. However, tomatoes become their own food group during the summer in my family.
In salads, sliced with cottage cheese, caprese salads, dipped in hummus, you name it and I've probably had it.
So, when the owner of The Robust Olive (and my precious boss) cut up a tomato, put some salt and pepper on it, and then drizzled it with Basil Olive Oil I was floored. It was honestly the first time in years that I have found a new way to eat fresh tomatoes. Not to mention it was so incredibly simple to make. My mind started thinking about all of the possibilities! It is the perfect last minute dish to take to a summer barbecue, a potluck, to a friends for a wine night, and so much more. I'm already planning on making it at the lake in July when I'm there with family.
Let me just tell you about my first bite... absolutely delicious. The basil Olive Oil completely changed the whole dish, and I don't think I'll ever be able to eat a sliced tomato any other way again. So here's how you can recreate this super simple dish in 5 minutes...
- large tomato (however many you want)
- Basil Infused Olive Oil
- salt and pepper
- basil leaves for garnish
First, slice all of your tomatoes and arrange them flat on a platter. Then, to your liking sprinkle tomatoes with salt and pepper. Lastly, drizzle tomato slices with the Basil Infused Olive Oil from The Robust Olive. Add
basil leaves for garnish if you'd like.
